Birria Frito Pie

Stuff you'll need

  • 2 cups Beef Birria, shredded (about ½ the recipe yield)
  • 1 bag (9.25 oz) Fritos® Corn Chips
  • 1 cup queso campesino or other Mexican melting cheese, grated
  • 1 tomato, chopped
  • ½ small sweet onion, finely diced
  • Pickled jalapeños, for garnish
  • Sliced green onions, for garnish
  • Sour cream (or Mexican crema), for garnish

What to do

  1. Preheat oven to 350℉.
  2. Spread Beef Birria in the bottom of an 8-inch cast iron skillet and gently warm it over medium heat. When hot, top with ¾ of the corn chips and cheese. Transfer to the oven and bake for 10 to 15 minutes or until the cheese is melted.
  3. Remove from the oven and garnish with tomato, sweet onion, pickled jalapeños, green onions, sour cream and remaining corn chips. Serve immediately.
