Stuff you'll need

  • ½ bag tortilla chips
  • 8 ounces pepper jack cheese, grated
  • 1 medium-sized tomato, diced (about ½ cup)
  • 1 small jalapeño, sliced into rounds
  • ½ small white onion, finely chopped (about ½ cup)
  • ⅓ cup cilantro
  • 2 cups (about ½ recipe yield) Beef Birria, shredded
  • ½ cup cotija cheese

What to do

  1. Preheat broiler to high.
  2. Line an ovenproof baking dish with half of the tortilla chips. Evenly top them with half of the pepper jack cheese, tomatoes, jalapeños, onions, cilantro and Beef Birria.
  3. Add the remaining tortilla chips, then top with remaining pepper jack cheese, tomatoes, jalapeños, onions, cilantro and
    Beef Birria.
  4. Transfer the dish to the broiler and cook until the cheese is melted and bubbly, about 3 minutes.
  5. Remove from the oven and sprinkle with cotija cheese.
